Sheet Pan Buffalo Cauliflower Bites

Cauliflower gets a serious upgrade here. Tossed in buffalo sauce, roasted until the edges get crispy and a little charred, then served with cool ranch for dipping. It’s the kind of game day snack that makes people forget they’re eating vegetables. Perfect for Super Bowl parties when you want something lighter on the table that still feels like real party food, or for when you’re craving buffalo wings but don’t want to deal with the mess.

Ingredients

  • 1 large head cauliflower, cut into bite-sized florets
  • 2 tbsp olive oil
  • 1/2 cup buffalo sauce (store-bought or homemade)
  • 1/2 tsp garlic powder
  • Salt and black pepper, to taste
  • Optional: ¼ cup melted butter (mix with buffalo sauce for richer flavor)
  • Serve with: ranch dressing, blue cheese dressing, celery sticks

Method

Prep the cauliflower
  1. Preheat oven to 425°F. Line a large baking sheet with parchment paper. Pat cauliflower florets dry with a paper towel (this helps them crisp up).
Season and toss
  1. In a large bowl, toss cauliflower with olive oil, garlic powder, salt, and pepper until evenly coated. Spread in a single layer on the baking sheet.
Roast until crispy
  1. Bake for 20 minutes, flipping halfway through, until the edges are golden and slightly charred.
Add the buffalo sauce
  1. Remove from oven, drizzle buffalo sauce (mixed with melted butter if using) over the cauliflower, and toss to coat. Return to the oven for another 8-10 minutes until the sauce caramelizes slightly.
Serve hot
  1. Transfer to a serving platter, drizzle with extra buffalo sauce if you want, and serve with ranch or blue cheese dressing and celery sticks on the side.

Notes

Helpful Tips
  • For extra crispy bites, use an air fryer at 400°F for 15-18 minutes, tossing halfway.
  • Make them spicier by adding cayenne pepper or hot sauce to the buffalo mixture.
  • These are best served fresh, but leftovers reheat well in the oven or air fryer.
  • Swap buffalo sauce for BBQ or honey garlic for a different flavor.
