Method
Prep the cauliflower
Preheat oven to 425°F. Line a large baking sheet with parchment paper. Pat cauliflower florets dry with a paper towel (this helps them crisp up).
Season and toss
In a large bowl, toss cauliflower with olive oil, garlic powder, salt, and pepper until evenly coated. Spread in a single layer on the baking sheet.
Roast until crispy
Bake for 20 minutes, flipping halfway through, until the edges are golden and slightly charred.
Add the buffalo sauce
Remove from oven, drizzle buffalo sauce (mixed with melted butter if using) over the cauliflower, and toss to coat. Return to the oven for another 8-10 minutes until the sauce caramelizes slightly.
Serve hot
Transfer to a serving platter, drizzle with extra buffalo sauce if you want, and serve with ranch or blue cheese dressing and celery sticks on the side.
