Method
Prep the ham and apples
Preheat oven to 350°F. Score the top of the ham in a diamond pattern and place it in a large roasting pan. Arrange the apple quarters around it and drizzle the apples with olive oil and a pinch of salt.
Make the glaze
In a small saucepan over medium heat, whisk together honey, Dijon mustard, apple cider vinegar, cracked peppercorns, and rosemary. Let it warm until smooth and fragrant, about 2–3 minutes.
Glaze and roast
Brush half the glaze over the ham. Cover loosely with foil and bake for 1 hour, basting occasionally with pan juices.
Finish with flavor
Remove foil, brush with remaining glaze, and roast uncovered for another 20–30 minutes, until the ham is glossy and the apples are soft and caramelized.
Serve
Slice and serve with roasted apples and spoonfuls of pan sauce. Garnish with fresh rosemary for a beautiful finish.
