Method
Preheat the oven
Preheat to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
Mix the dry ingredients
In a large bowl, whisk together flour, baking powder, and salt.
Combine the wet ingredients
In another bowl, whisk eggs and milk. Stir in half of the shredded cheese and the diced bell peppers.
Combine and fold
Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the pepperoni (and any favorite mix-ins).
Fill and top
Spoon the batter into the muffin cups, filling each about two-thirds full. Add a small spoonful of pizza sauce on top and sprinkle with the remaining cheese.
Bake
Bake for 18–20 minutes, or until golden and a toothpick inserted in the center comes out clean. Let cool slightly before serving.
