Cheesy Pizza Muffins: The Snack That Saves 3 p.m.

Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 3/4 cup milk (or non-dairy alternative)
  • 1 1/2 cups shredded cheese (mozzarella, cheddar, or a blend)
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup mini pepperoni slices (or turkey pepperoni)
  • 1/2 cup pizza sauce, plus more for dipping
  • optional: dried oregano, garlic powder, or red pepper flakes

Method

  1. Preheat the oven
  2. Preheat to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
Mix the dry ingredients
  1. In a large bowl, whisk together flour, baking powder, and salt.
Combine the wet ingredients
  1. In another bowl, whisk eggs and milk. Stir in half of the shredded cheese and the diced bell peppers.
Combine and fold
  1. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the pepperoni (and any favorite mix-ins).
Fill and top
  1. Spoon the batter into the muffin cups, filling each about two-thirds full. Add a small spoonful of pizza sauce on top and sprinkle with the remaining cheese.
Bake
  1. Bake for 18–20 minutes, or until golden and a toothpick inserted in the center comes out clean. Let cool slightly before serving.

  • Prep ahead: Store in the fridge up to 3 days or freeze up to 2 months. Reheat in the oven or microwave until warm.
  • Switch it up: Try cooked sausage, chopped veggies, or diced ham instead of pepperoni.
